Vermicelli Arrabbiata

Ok this is not a new story, but most of the time I feel super lazy to cook  when I have to cook just for myself. Yes, I know almost all of us do, but  this is when our “Jugaaru” mind (is there an English word for that, let me know in the comments below) comes into picture and we end up creating something interesting. This is what happened today and I named it Vermicelli Arrabbiata!!!

INGREDIENTS:-

Oil: 2 Tbsp
Vermicelli: 3/4 Cup
Onion : 1/4 Cup Chopped
Capsicum: 1/4 Cup chopped
Button Mushrooms: 2 Chopped
Basil: 1-2 Leaves
Parmesan Cheese: to sprinkle on top
I had left over no-cook Pizza/Pasta Sauce for that you will need:
Readymade tomato puree/ Canned tomato sauce: 3/4 Cup
Granulated garlic: 1/2 Tsp or to taste
Salt: to taste
Chilli Flakes: 1/2 Tsp or to taste
Italian Seasoning: 1 Tsp or to taste
Sugar: 1/2 Tsp or to taste

SERVINGS:-

This quantity will serve 1-2 people

METHOD:-

  • Boil vermicelli in boiling, salted water till two boils, drain and rinse with cold water(click on Namkeen Sevaiyan post to see the process details) and keep aside.
  • Mix all the ingredients of the sauce, check seasoning and adjust if required, keep aside.
  • Heat oil, add chopped veggies and cook for 2-3 mins on high flame, add sauce and cook for another 3-4 mins. on medium flame. 
  • Add crushed basil leaves.
  • Can add more salt and chilly flakes if required.
  • Add the boiled vermicelli, mix well and cook for another 2 mins.
  • Transfer it in the serving plate and grate some Parmesan Cheese over it.
  • Serve hot.
