Hope you guys enjoyed the Egg Pops (Click here for the recipe), so now it’s time for a small celebration. My daughter got a gift from the library today "a book and free pass to Kids Discovery Museum", though it was not a big event or any participation, still I thought to encourage her for this and made these cotton soft Blueberry Muffins for her. (I call these cotton soft as these will really melt in the mouth, so kids enjoy them a lot)
She told her Dad "Papa, I got this gift because I danced with my Teacher like this" and started singing her rhymes and dancing, Oh God these little sweet moments as so much fun!!! Just loved it :)
SERVINGS:-
This quantity will make 6 normal size muffins.

INGREDIENTS:-
Dry Ingredients Maida/Plain Flour : 1 Cup Castor Sugar: 1/4 Cup Baking Powder: 1/2 Tsp Baking Soda: 1/4 Tsp Blueberries: 1/2 Cup | Wet Ingredients Yogurt/Curd: 1/2 Cup Egg: 1/2 No Melted Butter: 60 gms or Oil: 40 ml Vanilla Essence: 1/2 Tsp Cinnamon Powder: 1/4 Tsp | METHOD:- -
Swift together all the dry Ingredients in a bowl, except blueberries. -
Whip together all the wet ingredients in a bowl, with an electric mixer for 2-3 mins, don’t over do it. -
Add blueberries to the dry mixture and mix. -
Combine both the mixtures with light hands, using a spatula. (It will be a thick batter) -
Line the muffin mold with cupcake liners and fill with the batter. (Fill 3/4th of the mold, leaving some space for the muffin to rise) -
Bake in a pre-heated oven at 375F or 190c for 18-19 mins. Take it out of the oven, insert a toothpick in the center of a muffin, if it comes out clean, it’s done and if not bake it for another 5 mins or till done. -
Let it rest for 5 mins, the un-mold it and keep on cooling rack till its reaches room temperature. -
Serve with tea, coffee, milk or just like that. |
