Cotton Soft Blueberry Muffins

Hope you guys enjoyed the Egg Pops (Click here for the recipe), so now it’s time for a small celebration. My daughter got a gift from the library today "a book and free pass to Kids Discovery Museum", though it was not a big event or any participation, still I thought to encourage her for this and made these cotton soft Blueberry Muffins for her. (I call these cotton soft as these will really melt in the mouth, so kids enjoy them a lot)

She told her Dad "Papa, I got this gift because I danced with my Teacher like this" and started singing her rhymes and dancing, Oh God these little sweet moments as so much fun!!! Just loved it :)

Yummiez Aloo Tikki “Recipe Idea & Review”

When ever it rains my craving for deep fried snacks along with tea erupts, though it didn’t rain yesterday, but whether was quiet pleasant and I had these Yimmiez Allo Tikki in my freezer, so I made this yummy Sandwich using the ingredients which were present in my fridge itself, nothing too fancy, but definitely super tasty and sinfully delight.

Butter Naan (Flat Indian Bread)

 
Hello friends I did this video some time back but didn’t post it here, so find this video recipe to make soft yummy Butter Naan at home. I have used gas tandoor to make the Naan but one can bake it in OTG also, keep it on the highest rack of your pre-heated  OTG and Grill it for 2-3 minute at 250c or till brown marks appear, then flip it over and cook from other side as well. Apply loads of butter and enjoy ; )

Banana Choco-chip Bread “Eggless”

I didn’t bake anything since long, Gawwdd how can I do so, really a long time, but finally I baked this soft yummy cake and yes again for my sweetie pie Molly. She just loves sweets and cakes, I gave her this cake as a evening snack and yes she did enjoy it : ) I have mentioned few tips and tricks to bake it perfectly along with the steps, hoping that you will enjoy the post.

Bread Pudding with Rose Syrup

Hello friends, I made this dish only and only for my 1.3 years toddler. Uff it’s so difficult to feed them. She has a big time sweet tooth, so I thought of this dessert which has a whole lot of goodness in it milk, eggs, nuts, butter and bread (I used brown bread to make it even healthier). I had to grind it in mixer to feed her, but if your baby eats just like that it’s so good.
Yes, like I said I made it for my baby, but could feed her only once, it came out so yummy that me and my brother couldn’t resist to finish up the whole thing, sorry baby mumma will make more for you.

Grilled Aubergine & Cheese Sandwich

I know aubergine or eggplant or brinjal  or baingan is not everyone’s favorite… even I hated it in my childhood but now-a-dayss I really like it specially the grilled one.. It tastes so very good in pizzas, pastas… and sandwiches… if you have any more ideas to use grilled eggplant then plzzzz lemme know…. I would just love to try that…..but as of now plzz try this s/w its really gud…

INGREDIENTS:-

Aubergine (Brinjal): 2 nos. Long ones
Tomato: 1/2 Big
Chesse Slices: 2 Nos.
Bread : 2 Slices
Mixed Herbs: 1 Tbsp
Salt & Pepper: to taste
Butter/oil: 2-3 Tbsp
Tomato Ketchup: to serve

METHOD:-

  • Slice the aubergine thinly, apply salt and keep side for 10 mins.

  • Wash it nicely after that…
  • Apply butter/oil, salt, pepper, herbs and rub nicely all over.

  • Keep aside for 5 mins…
  • Heat a pan and grill the slices nicely till done.. ( one can do it in oven also)

  • Meanwhile cut the corners of the bread and toast it till crisp.

  • Also deseed & slice the tomatoes as shown in pic.

  • Take toasted bread and place grilled aubergine over it.

  • Then place the cheese slice, tomato strips and sprinkle seasoning & herbs over it.

  • Grill it in preheated oven at 180 degree Celsius for 10 mins or till the cheese melts..

  • Serve hot with tomato ketchup…

Fried Egg in Bread

What to do when you are hungry n have just one egg & a slice of bread left in your fridge… this is what happened with me today… so I made this easy fried egg in bread… its as simple and easy  as a fried egg but just a li’l different in appearance that doesn't make it boring…

INGREDIENTS:-

Egg: 1 No.
Bread: 1 Slice
Oil: 1/2 Tsp
Salt: to taste
Pepper: to taste
Tomato Ketchup for garnish

METHOD:-

  • Cut circle from bread with the help of a cookie cutter or lid of a round box.

  • Heat oil in a pan.

  • Put bread slice in the pan and crack an egg in the center.

  • Cover with lid and cook till its set.

  • If you like can serve it at this stage also but I like to cook a little from the other side as well… so I flipped it very carefully…

  • Take out carefully from the pan, sprinkle salt an pepper over it and eat… if you like, add ketchup also… .. I don’t …did just for the pic.

Rava Idly/ Steamed Semolina Cake

Rava Idly is not just  light & healthy but very yummy as well… normally its served for breakfast but I can have it at any time of the day…. therefore its always made in huge quantity at my home and even the leftover ones are used in many ways…  can make Idly upma, temper it in north Indian Style with onion, tomatoes and Punjabi spices, can be deep fried and served with ketchup as a snack… etc etc… the list ends only where the creativity ends… but the credit for the creativity of pic below goes to my hubby dear…. Smile

INGREDIENTS:-

Rava/Suji/Semolina: 1 + 1/2 Cup
Curd: 1 Cup
Salt: to taste
Ghee (Clarified butter): 2 Tbsp
Mustard Seeds: 1/2 tsp
Curry Leaves: few (optional)
Water: as required
Fruit Salt (Eno) 2-3 pouch
   

METHOD:-

  • Heat ghee in a pan add mustard seeds, when it crackles add curry leaves & stir for few sec.
  • Add suji to the pan and roast till its nicely brown and fragrant, keep stirring so that it doesn’t burn.

  • Transfer this to a bowl and let it cool down.

  • Add curd & water to make smooth paste, keep aside for 1/2 hr.

  • Transfer some quantity of mixture which is enough to fill your mould once, in another bowl and if the mixture is too thick than add little water but don’t make it runny it has to be a little thick only.
  • Add 1/2 – 3/4 tsp fruit salt and mix it should form nice bubbles in the batter.

  • Immediately transfer it to the greased moulds, don’t fill the moulds completely keep some space to rise.

  • Steam for 15-20 mins & serve hot with coconut chutney & sambar…

Aalu Anardana Parantha/ Potato & Pomegranate stuffed Indian Bread

Heyllloooooo Guyzzzz…. m posting after long long time not b’coz I was busy or sometime but my laptop is not working at all.. some thing wrong with the motherboard…. and my DH has made this jugaard(temporary adjustment) for me hehehhehe…. I have collected many pics during this time so hopefully I’ll be posting ‘em now….
I know we have all eaten aalu parantha many times but I added Anardana Powder(Dried Pomegranate seeds powder) to it which gave a very different tangy taste… so try it…
This quantity will make 6-7 Paranthas…….

INGREDIENTS:-
For Stuffing:
Boiled Potatoes: 5 Medium
Onion Chopped: 1 Medium
Salt: to taste
Red Chilly Powder: to taste
Dry mango Powder: 1/2 tsp
Anardana Powder: 1 tbsp
Chaat Massala: 1/2 tsp
For Dough:
Whole wheat flour: 2 Cups
Water: to make dough
Clarified Butter/Ghee or butter: 10 tbsp
METHOD:-
  • Make dough with flour & water and keep it aside.

  • Mash boiled potatoes, add chopped onions & spices, give it a nice mix and check seasoning.

  • Take a small part from the dough, shape it into a small ball and apply dry flour on it.

  • Roll it to a thin circle using dry flour and apply butter.

  • Spread the potato mixture evenly over this.

  • Shape this into a ball again and roll into circle using dry flour.

  • Shallow fry/Grill it on a flat pan using butter or ghee.

  • Serve it hot with curd & pickles of your choice……

Piiizzzzzaaaa (Thin Crust)

All of us have had many varieties of pizzas and have our own favourites among ‘em, like wise mine was gourmet pizza at dominos that too cheese burst :p but, before our Goa trip.. there I had this thin crust crispy pizza with aubergine slices at Magic Italy @ Palelom Beach Goa….it wass so dammmm gud.. but as you know can’t order this pizza netime I feel like, so tried it at home and came out realllyyyy guuudd…sharing the recipe with you so please try it and this quantity will make 3 medium pizza…

INGREDIENTS:-

For the Pizza Base:-
Refined Flour(Maida): 2 Cups
Dried Yeast: 2 Tsp20
Sugar: 2 Tsp
Salt: to taste:
Water: 3/4 Cup
Refined Oil: 1/4 Cup
For the Topping:-
Round Aubergine/Brinjal : 1/2 Small
Sweet Corn: 1/2 Cup
Capsicum: 1 Medium
Tomato: 1 Medium
Onion: 1 Medium
Pickled Jalapenos: Few Slices
Pizza Cheese*: to taste :)
Pizza Sauce: 4-5 Tbsp
Pizza Seasoning: 3-4 Tbsp

METHOD:-

  • Heat water till lukewarm dissolve sugar, add yeast and keep it for 15-20 mins at a warm place.

  • It should become frothy as shown in picture below other wise don’t use it.

  • Add salt to the flour then slowly make soft dough using the yeast mixture add more water if required.
  • Knead the dough very nicely for 10 mins applying refined oil in between.
  • Keep the dough in a bowl and apply oil nicely on all sides so that it doesn’t dries up or stick to the bowl.

  • Let it rest at a warm place for 1 1/2 hr and it will increase in size as shown in picture below.

  • Punch it back to the original size and keep it again to rise for 1 hr.
  • Meanwhile cut aubergine into slices apply salt and keep aside.
  • Roughly chop all other veggies.
  • Wash the aubergine slices and grill in a pan with li’l oil.
  • Divided the dough into 3 equal parts and roll it into big circle applying dry flour.
  • Apply sauce over it then put veggies, sprinkle pizza seasoning and salt if required, aubergine slices and grated cheese.

  • Bake this in a pre-heated oven for 20 mins at 200 degree.
  • Yummyyy thin crust pizza is readyy…

Note* If you want normal crust not thin crust then divide the dough into two equal parts and this quantity will thus make 2 Pizza.
