Fruit and Nut Cake Eggless (Video Recipe)

Hello friends, I posted a video recipe of Coconut & Raisin Cookies (You can find the recipe here) a few days back and was so happy to make it, as my daughter just loves raisins so I thought she will love the cookies too, but but but you know what happened, she crumbled the cookies, picked out raisins and had them, I could do nothing but watch her doing that. Kids!!! We don’t even get to know when they grow up so smart. Anyways this was just a fun incidence I thought od sharing with you guysss.

I have posted a video recipe of fruit & nut cake already on youtube but this is the eggless version of it hoping that you will like it…

Banana Choco-chip Bread “Eggless”

I didn’t bake anything since long, Gawwdd how can I do so, really a long time, but finally I baked this soft yummy cake and yes again for my sweetie pie Molly. She just loves sweets and cakes, I gave her this cake as a evening snack and yes she did enjoy it : ) I have mentioned few tips and tricks to bake it perfectly along with the steps, hoping that you will enjoy the post.

Replace Eggs in Baking

Hellosss everyone how are you guyzzz doing??? I had a super awesome week after long long time, how was yours.. well, hope to be the same… I finally settled down in my house after a long vacation at mum’s place, loads of cleaning and arranging had to be done but obviously all worth it…

I found this picture online so thought of sharing with you guyzz, I just love eggs so don’t have any problem with adding it in my baking, but if I had to make for my mum I have to cut down on eggs, but the question arises what should I substitute it with, if you have the same issues then I think this post will be quiet helpful.

Baking In Microwave

I have not posted anything since last two days as the internet speed is so  slow and the worst part is I can’t do anything about it but wait. I know Saaaddd..

Well, talking about today’s post now, I had this super misconception for long that cakes are best baked in an OTG, but damm, I was so wrong, Microwave convection mode is not just good, but the best to bake any cake, the only thing is one has to operate the appliance properly. So, in this post I will mention step-by-step tutorial on how to use the convection mode of Microwave for baking. Hope it will be useful for my readers.

I have this model of Godrej, and its working fantastic since last 4 years.

Vanilla & Nuts Muffins

Woowwww.. making muffins is much more easier than eating ‘em… don’t trust me!!!!!! then please go ahead and try this recipe… you’ll lovvvvvvvvvvvvvvvvvvvvvvvvvveeeeeeeeeeeeee it… It’s a Vanilla muffin recipe but one can add nuts of their own choice or choco-chips…. etc etc…to make some variation to the original recipe… like I added almonds and raisins but I think walnuts would also taste really gud…

This quantity will make around 12 muffins…

INGREDIENTS:-

Dry Ingredients:
Maida (Refined flour): 1 1/4 Cups + 2 Tbsp
Castor Sugar: 1/2 Cup
Baking Powder: 1 Tsp
Baking Soda: 1/2 Tsp
Nut/Chocochips/Tuttifruity: 1/4 Cup (optional)
Wet Ingredients
Butter or Oil: 1/4 cup
Milk: 3/4 Cup (Cold)
Vanilla Essence: 1 Tsp
White Vinegar: 1 1/2 Tsp

METHOD:-

  • Combine all the wet ingredients in a Jug and keep aside.
  • Mix with a wire Wisk all the dry ingredients.
  • Combine both wet and dry ingredients take care not to over mix it.
  • Pour in muffin moulds and bake at 180 – 200 degrees (depending on you oven) for 15- 20 mins.
  • And its doneeeee……… Smile

Yogurt Cake with Chocolate Glaze

Yes I have made cake with curd before but never in Microwave ( in the same mode which we heat food) so this was the first time…. and it came out really gud... it had very soft and gluee texture which I really liked… and above all was baked in just 6 mins… too good for a person like me who has zero patience…. if baked in convection mode or OTG it would have take 40 mins… so happy meeeeeee…..

I served it with chocolate glaze… same which is topped on doughnuts… and sprinkled some colourful sugar dots to make it more tempting (though my brother didn’t like it butttt I don’t care…. hehhehehe)

Sponge Cake with Whipped Cream & Chocolate Vermicelli

Hello friendsss…. I made this cake for my Mother & Father - in- law’s anniversary and it came out really good…. It was very soft n spongy and chocolate vermicelli added a lot to the taste… I bought this vermicelli from b’lore and its available at many departmental stores but if you can’t find it, can substitute with chocolate flakes…

INGREDIENTS:-

For Cake:
Eggs: 6 Nos.
Flour/Maida: 1 Cup
Powdered Sugar: 1 Cup
Baking Powder: 1/2 tsp
Vanilla Essence: 1 tsp
Salt: 1/4 tsp
For Icing:
Whipping Cream: 300 Gms
Chocolate Vermicelli: 1/4 Cup
Water: 1/2 Cup
Sugar: 2-3 Tbs

METHOD:-

  • Grease the mould from all sides and keep aside.
  • Pre heat oven at 250 degree Celsius for 10 mins meanwhile prepare the batter for the cake.
  • Separate egg yolk & white of all the eggs.

  • Whip egg whites till white & hard peaks.

  • In a separate bowl beat egg yolks, sugar & vanilla essence.

  • In another bowl swift maida, baking powder, salt & mix properly.
  • Mix the yolk & sugar mixture with the egg white with very light hands.

  • Now mix the flour with this mixture again very slowly and lightly.

  • As soon as it is mixed, immediately  pour the mixture into the baking mould and bake in oven for 25-30 mins at 180 degree Celsius ( make sure that the mould is not completely filled you should leave some same for the batter to rise).

  • Insert a knife in the center of the cake and if it comes out clean then the cake is ready. keep it aside for some time to set then demould it.

  • For ICING- Chill the cream in freezer then whip it till soft to hard peaks (keep ice cubes under the bowl while whipping the cream so that the cream doesn’t form into butter).

  • Dissolve sugar into water.

  • Cut cake into two equal halves.

  • Take one layer sprinkle sugar syrup over it then spread whipped cream generously and sprinkle chocolate vermicelli.

  • Keep the second layer of the over it, sprinkle sugar syrup, spread cream and cover the cake with cream from all sides then garnish with vermicelli.
  • Cake is ready to eat…..

Sugar Dotted Choco Chip Cake

Or should I call it my husband's birthday cake… I really wanted to make cake for his b’day  since so many years and finally I did happy mee.. :) well as this area is new to us  so it was difficult to find the ingredients but he(Vikas) was really sweet to get every thing for me…
Well initially the plan was to make Chocolate Cake but we couldn’t find coco powder so I made Choco Chip cake using the cooking chocolate which my supeeeeerrrr  sweet brother-in law bought for me…. :)

INGREDIENTS:-
Cooking Butter: 125gms
Flour: 1 1/2 Cups
Condensed Milk: 100 ml
Powdered Sugar: 3/4 cup + 4 tbsp
Water: 1/2 cup
Baking Powder: 1 Tsp
Coke: 300 ml
Amul Cream: 400 ml
Choco Chips: 1/2 cup
Sugar Dots: to garnish
METHOD:-
  • Mix condensed milk and sugar 3/4 cup properly then add cooking butter (butter should be soft) and whip till light and fluffy.
  • Chop Chocolate into small pieces or one can use ready made choco chips.
  • Add choco chips to the butter mixture.

  • Swift flour and baking powder together and add this to the wet mixture and mix very slowly, add coke to it taking care that the cake batter is neither very thick nor very runny. 
  • Meanwhile pre heat the oven at 250 c for 10 mins and grease a thin flat baking tray “because of using tray instead of mould, cake will be cooked in very less time”
  • Pour the batter in the tray and bake this for 10 mins at 220 c and check if its cooked by inserting a knife into it or else cook for 5 mins more..
  • Once the cake is cooked let it cool down and meanwhile whip the chilled cream till hard peaks in a bowl keeping ice under the bowl *other wise it will turn into butter.
  • Slice the cake into 2-3 slices depending upon the shape of cake you want..

  • Dissolve 4 Tbsp sugar in water and sprinkle it over one slice of cake to make it soft the spread whipped cream over it generously, keep the other layer over it and repeat the procedure till last layer of cake.
  • Once you have kept the final layer cover the whole cake with cream and garnish with sugar dots.
  • And your cake is ready… hufffff… :)
