Banana Choco-chip Bread “Eggless”

I didn’t bake anything since long, Gawwdd how can I do so, really a long time, but finally I baked this soft yummy cake and yes again for my sweetie pie Molly. She just loves sweets and cakes, I gave her this cake as a evening snack and yes she did enjoy it : ) I have mentioned few tips and tricks to bake it perfectly along with the steps, hoping that you will enjoy the post.

INGREDIENTS:-

Dry Ingredients:
Plain Flour(Maida): 1 1/2 Cup
Baking Powder: 1 Tsp
Baking Soda(Cooking Soda): 1/2 Tsp
Choco-Chips: 1/4 Cup + 1 Tbsp

Wet Ingredients
Melted Butter: 100 Gms/ 1/2Cup
Mashed Banana: 3/4 Cup or 2 Ripe Bananas
Condensed Milk: 1/2 Cup
Castor Sugar: 1/2 Cup
Vanilla Essence: 1 Tsp
Milk: 1/2 Cup at room temprature

SERVINGS:-

This quantity is good for 6-8 People.

METHOD:-

  • Sift together all the dry ingredients (except Choco-chips) in a bowl.

  • Add all the wet ingredients (except milk) in a bowl and mix for 2-3 mins with an electric mixer.

  • Now add the flour mixture (in 3 parts) and milk (in 2 parts) to the batter alternatively and again mix with an electric mixture.
  • In the last or 3rd part of flour, add choco-chips to the flour, so that the flour is coated nicely over the chips, then add this to the batter and mix well. This way chips won’t sink to the bottom.

  • Now pour this batter in a greased and dusted 8x4 inch rectangular or 8 inch round mould.
  • Sprinkle some choco-chips on the top and bake in a pre-heated oven at 180c for 35- 40 mins.

  • Take it out of the oven, insert a toothpick in the center, if it comes out clean, mean your cake is done, if not, then bake for another 5-10 mins. As temperature varies based on the Oven and climate conditions.

  • Let it cool down for 1/2 an hour, then demould it. Do not cool it under a fan, this will make the cake dry.
  • I would suggest not to keep the cake in fridge as it will spoil the texture and taste.
  • Shelf life would be 2-3 days if not refrigerated, otherwise 5-7 days.
