Komal says that she honestly believes “Health is Wealth”, therefore has send us a very healthy recipe of Carrot Cake and Beetroot which is flavoured with Ginger and Cinnamon, a perfect cake for winters I must say!!!
INGREDIENTS:-
Carrot: 1 Cup Grated Beetroot: 1 Cup Grated Eggs: 2 Nos. Sugar: 1/2 Cup Powdered Plain Flour or Whole wheat Flour: 1 Cup Ginger: 1 Tsp Grated | Cinnamon Powder: 1/2 Tsp Salt: 1/4 Tsp Baking Soda: 1/4 Tsp Baking Powder: 1/2 Tsp Oil: 2 Tbsp Vanilla Essence: 1 Tsp |
METHOD:-
- Pre-heat the oven at 200c for 10 mins.
- In a bowl, mix together eggs, sugar & vanilla essence and beat till light & fluffy.
- Add oil to this and beat again.
- Now add carrot, beetroot and ginger and mix well.
- Sift in flour, cinnamon powder, baking powder, baking soda and mix with light hands.
- Pour this batter in a greased and dusted cake tin.
- Tap the tin 2-3 times.
- Bake this for 30 + 10 mins in the preheated oven at 200c (for the first 30 mins bake covered, then un-covered for next 10 mins)
- And the cake is done, Serve at room temperature or a little warm, the way you like.
