Hello guyzz, I have made so many things, but never tried Biryani. Yes, that’s true, so I finally thought of trying my hands on it an it turned out to be just perfect!!! Perfect balance of spices, nothing sticking to bottom and nothing overdone as well, so the end result was super happy me : ) yeah yeah!!! and not to forget I used Kohinoor Brown Rice (Click on the name for Review) instead of normal basmati Rice and Vezlay Soya Chikka (Click on the name for Review).
INGREDIENTS:-
Brown Basmati Rice: 1 Cup Vezlay Soya Chikka: 1 Pack Oil: 2-3 Tbsp Cumin Seeds: 1/2 Tsp Onion: 1 Medium Ground to paste Ginger Garlic Paste: 1 Tbsp Diced Vegetables: 1 Cup Curd: 1/2 Cup | Biryani Masala: 2 Tbsp Salt: to taste Red chilly Powder: to taste Coriander Powder: 1/2 Tbsp Water: 1/2 Cup Chopped Fresh Mint: 1/2 Cup Chopped Fresh Coriander: 1/2 Cup Red Orange Colour: a few drops |
SERVINGS:-
This quantity will serve 3-4 people.

METHOD:-
- Boil brown rice till 3/4th done, in salted boiling water with a few cloves and green cardamom.
- Strain, remove the cloves and cardamom and keep aside.
- Heat oil in a pan, add cumin seeds, when it crackles add onion paste and fry till brown.
- Add ginger garlic paste and fry for another 1 min.
- Now add the veggies, curd, rest of the spices, 1/4 cup water and cook covered will till 3/4th done.
- Remove the lid and add soya chikka, 1/2 of the mint and coriander, then again cook covered for 2-3 mins.
- Now layer the boiled rice over veggies, sprinkle some drops of color and the remaining mint & coriander.
- Cover the lid and cook for another 5-7 mins on slow flame.
- Open the lid and toss the Biryani from one side with very light hands.
- Biryani is ready to serve.
- Transfer this to a serving bowl and serve hot with Raita or Salaan or both.
Cooking Tips:-
- If soya chikka is not available, then boil 1/2 cup normal soya nuggets/chunks and marinade it with salt, red chilly powder, cumin seeds, lime juice/vinegar for 15-20 mins.
- If brown rice is not available one can use normal basmati rice.
- One can add 1/4 cup fried brown onions to this, I don’t like the taste so skipped it.
