Hello guyzz, here comes one more rich & creamy Indian main course Aalu Pasanda!!! Slices of potatoes sandwiched with paneer (cottage cheese) and dry fruits and served with silky smooth Malai Gravy. You can make the same gravy/sauce for other Indian preparations as well. So, enjoy the post and do pour lots of comments… : )
INGREDIENTS:-
For Gravy:- Onions: 2 Medium Tomatoes: 3 Medium Garlic: 3-4 Cloves Ginger: 1/2 Inch Cashew Nuts: 1 Tbsp Poppy Seeds (Khus Khus): 1 Tbps Oil: 4 Tbsp Cumin Seeds: 1/2 Tsp Salt: To Taste Red Chilli Powder: to taste Turmeric Powder: 1/4 Tsp Garam Masla: 1/2 Tsp Amchur Powder(Dry Mango Powder): 1/2 Tsp Kasoori Methi (Dry Fenugreek Leaves): 1 Tbsp Milk: 1/4 Cup Sugar: 1 1/2 Tsp Water: as required | For Pasanda:- Potatoes: 2 Medium thinly sliced Water: to soak Salt: to taste For Stuffing:- Cashew nuts: 1 Tbsp (Chopped) Raisins: 1 Tbsp (Chopped) Paneer (Cottage Cheese): 100 gms Grated Salt: to taste Red Chilly Powder: to taste Garam Masala: 1/4 Tsp Amchur Powder: 1 Pinch For Batter:- Corn flour: 1 1/2 Tbsp Maida (Plain Flour): 3 Tbsp Water: as required Salt & Black Pepper Powder: to taste Oil: to deep fry |
SERVINGS:-
This quantity will serve 3-4 people.

METHOD:-
For Gravy:-
- Heat 2 Tbsp oil, add cumin seeds, when it crackles add onions, garlic & ginger and fry till it turns light brown.
- Now add chopped tomatoes poppy seeds and cashew nuts and cook for a min.
- Add all the spices mentioned under gravy and cook till oil separates.
- Remove from stove, let it cool down, then make a smooth paste adding water as required.
- Heat 2 Tbsp oil in a pan, add the paste & 3/4 cup of water and cook covered till oil separates.
- Switch off the stove, add sugar and milk, mix well, switch on the stove again and cook for another 2-3 mins.
- Malai Gravy is ready now.
For Stuffing:-
- Mix well all the ingredients mentioned under stuffing and the stuffing is ready.
For Batter:-
- Make a smooth paste of coating consistency using the ingredients mentioned under Batter.
For Pasanda:-
- Take one slice of potato, keep stuffing over it and cover with another slice of potato.
- Press this with your hands.
- Dip in the batter, first from the sides then center.
- Deep fry in hot oil, on medium flame till nice and crisp.
To Assemble:-
- In a serving platter, pour the gravy first, then arrange the Aalu Pasanda over it.
- Garnish as per your liking.
- Serve hot with your choice of bread.
