Appams soft spongy curd balls, basically a South Indian delicacy prepared on various occasions and times. A lot many variations can be mad out of this lovely delicacy, one of them is Aaloo Masala Appams!!! Enjoy the recipe..
INGREDIENTS:-
For Stuffing:- 2 Medium sized boiled potatoes 1 Finely chopped medium onion 1 Tbsp Ginger Green Chilly paste 1 Tsp turmeric powder 1 ½ Tsp Pav Bhaji Masala ½ Tsp Garam Masala 2-3 Curry Leaves Salt to taste Lime Juice to taste | For Appams:- 1 tbsp Eno Other ingredients:- |
Cooking Time: 15-20 mins
Servings: 10-12 pcs
METHOD:-
For stuffing
1) Heat some oil in a pan.
2) Add Green chilly garlic paste and curry leaves and cook for a 1 min.
3) Now add finely chopped onions and cook till turns translucent brown.
4) Now add the mashed boiled potatoes and mix well.
5) Add turmeric powder , salt , Pav Bhaji Masala , Garam Masala and mix it well with the potatoes.
6) Cook for about 2-3 minutes till the potatoes turn a little brown and looks cooked well.
7) Now switch off the flame. Add lime mix well and keep aside.
Your Stiffing is ready.
How To proceed :
- Add Eno Salt and some green chilly ginger paste to the batter.
- Now in an Appam pan, put some oil in each dish.
- Put some sesame and mustard seeds.
- Now fill the hole half with batter.
- Then place aloo stuffing on it
- Now pour some more batter over it.
- Cover it with the lid
- After few secs turn around the appam to ensure it cooked well from both sides.
Once cooked well remove from the pan and serve it hot with Sauce and Chutney of your choice.
Cooking Tip:-
1) Ensure the batter consistency is neither too thick nor too soft as it should be firm enough to hold the stuffing
2) You can add cheeses to this if required.
3) It can be risky to add sesame and mustard seeds, so kindly ensure to always to do it on low flame and also keep proper distance while doing.
