Vermicelli Arrabbiata

Ok this is not a new story, but most of the time I feel super lazy to cook  when I have to cook just for myself. Yes, I know almost all of us do, but  this is when our “Jugaaru” mind (is there an English word for that, let me know in the comments below) comes into picture and we end up creating something interesting. This is what happened today and I named it Vermicelli Arrabbiata!!!

Soya Chikka Biryani using Brown Rice (Video Recipe)

Hello guyzz, I have made so many things, but never tried Biryani. Yes, that’s true, so I finally thought of trying my hands on it an it turned out to be just perfect!!! Perfect balance of spices, nothing sticking to bottom and nothing overdone as well, so the end result was super happy me : ) yeah yeah!!! and not to forget I used Kohinoor Brown Rice (Click on the name for Review) instead of normal basmati Rice and Vezlay Soya Chikka (Click on the name for Review).

Wholesome Pasta Salad & Sour Cream (Video Recipe)

I developed a liking for salads long back, so I use to try out different salad recipes and various combinations on dressings. I recently bought this ready made thousand island dressing during a trip to supermarket, but I didn’t want to use this as it for my salad, so thought of combining it with sour cream and it worked really well. Checkout the video to make fresh “SOUR CREAM” at home. Uummmmm well, I am thinking to make Thousand Island Dressing also at home next time. Mushy White Beans

On searching through the pulses in fridge I came across White Kidney Beans, an iron rich grain which is used for making curries in many households. Usually it’s prepared in Tomato Gravy but the  blend of spinachwith this  was a such a healthy delight. This is simple variation of the same, making it more healthier and richer in taste not to mention the kids would also enjoy the very taste of it.

Yummiez Aloo Tikki “Recipe Idea & Review”

When ever it rains my craving for deep fried snacks along with tea erupts, though it didn’t rain yesterday, but whether was quiet pleasant and I had these Yimmiez Allo Tikki in my freezer, so I made this yummy Sandwich using the ingredients which were present in my fridge itself, nothing too fancy, but definitely super tasty and sinfully delight.

Quaker Nutri POHA “Product Review”

Today was a fun day for Molly and me both, enjoyed the company of good n like minded friends and it was so very refreshing, but sadly yesterday was not so good for my sweetheart, she got her two vaccinations done and it turned out to be a little hectic for me. Therefore, in the jiffy I tried this Quaker Nutri POHA (Home Style) to satisfy my hunger and will review the same in today’s post.

Sprouts & Pineapple Salad

Hello everyone. How are you guyzz doing??? After my last sinful post of deep fried Vegit Veg. Cutlets, (you can find the review here) I wanted to make something healthy and light so came up with this salad. It has a nice combination of fruits and Sprouts with a light Vinaigrette/French Dressing. I have also given a light twist to the dressing by adding orange juice to it as I have added fruits to it so thought I would combine well, and yes I did.. Just don’t believe my words, go ahead and try the recipe yourself and let me know your feedback in the comments box below.

Kadhai Veg. Pulao/Rice

When I made this lovely Kadhai Masala (you can find the recipe here) one thing I was very sure of, that I won’t make usual kadhai paneer, kadhai mushroom or anything like that using this spice mix. So, I thought of this pulao recipe and trust me guyzzz you have to try it, for my sake, pleaseeeee… It came out really well and was kind of a quicker version of veg Biryani, infact I thought I will use this spice mix in other Biryani preparations as well.

Well, I got so hungry in the process of cooking that couldn’t do the final garnish really well, so don’t be disappointed with the recipe pic, it tastes awesome!!!!

Grilled Aubergine & Cheese Sandwich

I know aubergine or eggplant or brinjal  or baingan is not everyone’s favorite… even I hated it in my childhood but now-a-dayss I really like it specially the grilled one.. It tastes so very good in pizzas, pastas… and sandwiches… if you have any more ideas to use grilled eggplant then plzzzz lemme know…. I would just love to try that…..but as of now plzz try this s/w its really gud…

INGREDIENTS:-

Aubergine (Brinjal): 2 nos. Long ones
Tomato: 1/2 Big
Chesse Slices: 2 Nos.
Bread : 2 Slices
Mixed Herbs: 1 Tbsp
Salt & Pepper: to taste
Butter/oil: 2-3 Tbsp
Tomato Ketchup: to serve

METHOD:-

  • Slice the aubergine thinly, apply salt and keep side for 10 mins.

  • Wash it nicely after that…
  • Apply butter/oil, salt, pepper, herbs and rub nicely all over.

  • Keep aside for 5 mins…
  • Heat a pan and grill the slices nicely till done.. ( one can do it in oven also)

  • Meanwhile cut the corners of the bread and toast it till crisp.

  • Also deseed & slice the tomatoes as shown in pic.

  • Take toasted bread and place grilled aubergine over it.

  • Then place the cheese slice, tomato strips and sprinkle seasoning & herbs over it.

  • Grill it in preheated oven at 180 degree Celsius for 10 mins or till the cheese melts..

  • Serve hot with tomato ketchup…

Sambar/ Tangy Lentil Preparation

Its thin, tangy lentil preparation without which no meal it complete in south India.. The tang in the dish is bought by adding tamarind and the awesome flavor is bought adding a time tested blend of spices… It tastes best when its served steaming hot… I made idly and sambar for the dinner but was so excited to eat that I forgot to take pics of sambar alone. : )

This quantity will serve 3-4 ppl..

INGREDIENTS:-

Red Gram (arhar dal): 1 Cup
Onions: 2 Chopped Roughly
(Ghiya): 1/2 Small Chopped Roughly
Tamarind pulp: 4-5 Tbsp
Sambhar Powder: 2 tbsp
Water: as required
Salt: to taste

For Tempring (Tadka)
Oil/Ghee(Clarified butter): 3-4 Tbsp
Asafetida (hing): a pinch
Dry Red Chilly: 2 pieces
Mustard Seeds: 1/2 tsp
Curry Leaves: Few
Red Chilly Pwder: to taste

METHOD:-

  • Wash and soak lentil for 1/2 to 1 hr. after that drain the water and pressure cook with 4 cups water and salt, give 1 whistle then reduce the flame and cook for 5 mins.
  • Mash the dal when pressure comes down and keep aside, meanwhile prepare the tempering.
  • Heat oil in a pan add mustard seeds, when it crackles add curry leaves & red chilly stir for 30 sec.
  • Add onions and cook till it turns brown.

  • Add vegetables, little salt ( take care while adding salt as we have already added salt in the dal) ,tamarind pulp, sambar powder, & water if required.

  • Mix properly and cook till veggies are tender then add red chilly powder.

  • Add boiled dal, 1 cup water, mix properly and simmer on slow flame for 5 mins.

  • Serve super hot with idly, dosa, vada…. etc etc…. Smile

Sandwich Spread Salad

 The Star of my today’s post is Fun Food’s Sandwich Spread (veg.), it has a very creamy mayonnaise like texture but tastes very diff.. has a sweet tangy taste with tiny bits of veggies that makes it so yummy… I use it in my lots of preparations like sandwiches off course and pastas, salads, dips with any snack etc etc… Here I have made a very easy n yummy salad using this…. and you can se the picture of dip at the e…
This quantity will serve 2-3 ppl…..

INGREDIENTS:-
Blanched Veggies: 1 Cup
Sweet Corn: 1/4 Cup
Boiled Pasta: 1/2 Cup
Pizza Seasoning: 1 Tsp
Mayonnaise: 2 Tbsp
Sandwich Spread: 3 Tbsp
Salsa: 1 Tbsp
METHOD:-
  • Mix together in a bowl blanched Veggies of your choice in salted water,( I took Yellow & Red Peppers, Zucchini & green peas) defrosted sweet corn & boiled pasta.

  • Let it cool down then add pizza seasoning, mayonnaise & s/w spread & mix well, check seasoning & adjust if required.

  • Cool it fridge for some time and serve with salsa on top as in the display pic.

Aalu Anardana Parantha/ Potato & Pomegranate stuffed Indian Bread

Heyllloooooo Guyzzzz…. m posting after long long time not b’coz I was busy or sometime but my laptop is not working at all.. some thing wrong with the motherboard…. and my DH has made this jugaard(temporary adjustment) for me hehehhehe…. I have collected many pics during this time so hopefully I’ll be posting ‘em now….
I know we have all eaten aalu parantha many times but I added Anardana Powder(Dried Pomegranate seeds powder) to it which gave a very different tangy taste… so try it…
This quantity will make 6-7 Paranthas…….

INGREDIENTS:-
For Stuffing:
Boiled Potatoes: 5 Medium
Onion Chopped: 1 Medium
Salt: to taste
Red Chilly Powder: to taste
Dry mango Powder: 1/2 tsp
Anardana Powder: 1 tbsp
Chaat Massala: 1/2 tsp
For Dough:
Whole wheat flour: 2 Cups
Water: to make dough
Clarified Butter/Ghee or butter: 10 tbsp
METHOD:-
  • Make dough with flour & water and keep it aside.

  • Mash boiled potatoes, add chopped onions & spices, give it a nice mix and check seasoning.

  • Take a small part from the dough, shape it into a small ball and apply dry flour on it.

  • Roll it to a thin circle using dry flour and apply butter.

  • Spread the potato mixture evenly over this.

  • Shape this into a ball again and roll into circle using dry flour.

  • Shallow fry/Grill it on a flat pan using butter or ghee.

Corn & Peas Pasta Salad

It happens to a super hit recipe in my family and most of the time I cook it just to see that glint in Vikas’s eyes when he eats this salad. Yeah its a salad but can be served as a full dress meal for lunch or dinner and this quantity will serve 2-3 people..
I had used Penne pasta but one can choose which ever he/she likes even spaghetti can be used for this dish.

 INGREDIENTS:-
Penne Pasta: 1 Cup
Tomato: 5-6 Medium
Mayonnaise: 3-4 Tbsp
Capsicum: 1 Medium
Oil: 2 Tbsp
Garlic: 3 Cloves
Onion: 1 Medium
Salt: To Taste
Red Chilly Pwdr: To Taste
Tomato Ketchup: 1 Tbsp
Pizza Seasoning: 1 Tbsp
Sugar: 1 Tbsp
Olives: 3 Piece
Frozen Sweet Corn: 1/3 Cup
Frozen Peas: 1/3 Cup
Water: 1/2 Cup + to boil
METHOD:-
  • Boil Pasta in salted water till al-dante.
  • Roast capsicum on gas till black marks appear on its skin and chop.
  • Mix mayonnaise, capsicum, pasta and keep aside.
  • Make slit on tomatoes skin and put it in boiling water for mins. then remove the skin.(I used 2 country tomatoes as they are more sour then the normal ones if you are using the normal ones  then add li’l vinegar to the sauce).
  • Put tomatoes in a blender and make puree.
  • Heat oil in a pan add chopped garlic sauté a bit and add onion cook for 3-4 mins.
  • Add tomato puree, water, salt and red chilly powder and cook till sauce like consistency.
  • Add tomato ketchup, pizza seasoning, sugar then check seasoning and adjust if required.

  • Add peas, corn & olives to the sauce and cook till peas are soft. ( I used frozen peas if you are using fresh ones the add it before so that the are cooked properly).
  • Add this sauce to pasta and keep in fridge once it reaches room temperature.
  • Serve it cold.
